Save my LAZY, ONE-PAN EGGPLANT PARM for a night when you are craving eggplant parm, but don’t have time for the real deal. Cre by @erekav Ingredients: 4 baby eggplant ¼ cup 1 tbsp olive oil 1 ½ lbs of grape tomatoes 3 large garlic cloves ½ tsp salt ¼ tsp pepper 1 tsp dry oregano 1 tbsp jarred Calabrian chili pepper ¼ cup fresh basil ½ cup grated parmigiano reggiano 5 ounces fresh mozzarella torn into small pieces Breadcrumb Ingredients: 1 ¼ cup panko breadcrumbs ⅓ cup grated parmigiano reggiano

Uaaaaaaaaà 💙 Eggplant Parm 🍆 … Italian comfort food. And always best to serve it once it’s cooled down and at room temperature. Recipe:Eggplant Slices dredged in flour and then fried golden. I I use my David Rocco Tomato sauce and just layer it with sauce, eggplant and cheese .. 4 layers. The cheese I use is a mix of smoked provola, mozzarella and parmigiano reggiano.
