Invertase - Wikipedia
Invertase is a glycoprotein that hydrolyses (cleaves) the non-reducing terminal β-fructofuranoside residues. Invertases cleave the O-C(fructose) bond, whereas the sucrases cleave the O-C(glucose) bond. [3] Invertase cleaves the α-1,2-glycosidic bond of sucrose. For industrial use, invertase is usually derived from yeast.
What Is Invertase? - The Spruce Eats
2022年9月28日 · What Is Invertase? Invertase is an enzyme. When added to sucrose (table sugar) or foods that include sucrose, invertase splits the sugar into its component parts of glucose and fructose. It is commonly called "invert sugar" or "inverted sugar syrup."
Invertase Guide - Uses, Benefits, Before/After, Side Effects
2023年3月15日 · Invertase, also known as beta-fructofuranosidase, is an enzyme that helps break down sucrose (common table sugar). It enhances the digestion of starch, sugar and other carbohydrates so that it will be readily used as a source of energy by the body.

Invertase (d-fructofuranosidfructohydrolase, EC 3.2.1.26) is the enzyme that capable both break down α-1,4-glycosidic linkage between d-glucose and d-fructose of sucrose and transferring αβ-D-O-fructofuranoside residue to an acceptor substrate (Toledo et al., 2019).
Three-dimensional Structure of Saccharomyces Invertase
Invertase (EC 3.2.1.26; β-fructofuranosidase) catalyzes the hydrolysis of the disaccharide sucrose (table sugar) into glucose and fructose and is a major enzyme present in plants and microorganisms.
