While it's most famous for risotto, Arborio rice can also be used in other dishes like rice pudding, soups, and even paella.

I have made paella with all varieties of rice, although conventionally it is made with Spanish short-grain. Italian Arborio rice, French rice from Camargue, and Asian or American rice work as well.

Add them in step 1 along with the squid to give them enough cooking time. Arborio rice will work perfectly well instead of paella rice, if you prefer.
